Aloo Gosht

From North India. A distinctive flavour of Ghee & potatoes. Simply delicious.

Ingredients

  • 2.2lbs lamb cut into cubes
  • 1lb of med sized potatoes cut into cubes
  • 2oz Butter
  • 2 tbsps of cooking oil
  • 2 large onions, chopped
  • 1-2 tbsps tomato paste
  • 15 fl.oz warm water
  • Juice of one fresh lemon
  • Handful of coriander leaves, finely chopped, for décor

Method

In some butter fry potatoes until golden brown. Remove from heat and take out with a slotted spoon, keeping aside.

In the remaining butter add the cooking oil. Add 1 large chopped onion and all spices. Cook for about 5 minutes, stirring all the time so as not to burn the spices. Take off heat. Put in liquidiser 1 large onion, add a little water to blend, then add blended onion to pan, stirring frequently. Add the meat on a high heat cooking until it changes colour, probably in about 5-6 minutes.

Stir in the tomato paste and add 15 fl oz of warm water, bringing to the boil, then cover and simmer for about 40 to 50 minutes or until the meat is tender.

Add pre-browned potatoes and cook for a further 15 minutes or until the potatoes are tender.

Take off the heat, add the lemon juice and serve with a sprinkle of coriander leaves.
