Chicken Do-Piaza
(“Two Onions”)
A simple but popular dish from
Southern India blending onions (hence the name!) with a
vibrant “curries4u” spice
mix.
Ingredients
- 2 ˝ lbs chicken fillet (or boneless thigh cut
into pieces – more tender & never dry!)
- 2 large onions
- 4 tbsps cooking oil
- 1oz butter (about 2 “nobs”)
- 1 can chopped tomatoes
- Juice of 1 fresh lemon
- Handful of coriander leaves, finely chopped, for
décor

Method
Cut chicken into bite size
pieces.
In a liquidiser or food processor
add 1 large onion and all spices, with a little water
if necessary. Blend into a smooth paste.
Add 4 tbsps of cooking oil into a
pan and heat. Add the liquidised ingredients, stir for
4-5 minutes, but do not burn!
Add one can of diced tomatoes &
the juice of one lemon to the pan to prevent the spices
sticking. When you have used up all the tomato juice
(in other words the sauce has thickened a little) add
the cut chicken and “fry” over a medium
heat until the chicken has changed colour. Then add 6fl
oz( 180 mls) of warm water, bring to the boil, cover
and simmer with lid on for about 25 minutes.
In another frying pan cut up 1 large
onion into rings and fry with the butter. Cook until
lightly browned. Take the chicken off the heat and add
the browned onion and butter to it.
Sprinkle with the chopped coriander
leaves.
