Mixed Vegetable Curry

Seasonal vegetables in a rich sauce, complemented with fresh onions & tomatoes.

Ingredients

  • One large onion, finely chopped
  • 5 tbsps cooking oil
  • 1 tin chopped tomatoes
  • ˝ lb diced potatoes
  • ˝ lb frozen mixed veg, or fresh, (your choice!)
  • 1 tbsp of tomato paste
  • 1 tsp sugar
  • Handful coriander leaves, finely chopped, for décor
  • “Curries4u” Vegetable Curry Spice Pack

Method

Finely chop one large onion. Heat 4-5 oil in pan and fry the onion until lightly browned.

Add all spices, mix well and cook for 1-2 minutes but without burning.

Add all the vegetables. ie:- potatoes, beans, carrots, peas, & broccoli. (It is easier to buy a frozen bag of mixed veg but this will not be as “crisp” as fresh veg – watch out for soggy!).Stir for bit to coat vegetables.

Add chopped tomatoes with juice, tomato paste and sugar. Stir continuously for about 2 minutes over a low heat.

Add 5 oz warm water as you will already get more water out of the frozen veg so you will have more liquid. (If using fresh vegetables then you will need 10 fl oz of water).

Cover and cook for 5-6 minutes or until vegetables are soft. Take off heat. Consistency should not be runny. If it is, simmer with lid off until thickened.

When finished sprinkle with coriander leaves.
