Mushroom Bhaji
Mushrooms with onions in a rich tomato sauce. Excellent
side dish!
Ingredients
- 3-4 tbsps of cooking oil
- 1 medium sized onion, finely chopped
- 8 oz. (240 mls) mushrooms
- 1 tbsp tomato paste
- “Curries4u” Mushroom
Bhaji Spice Pack
Method
Cook onions in oil until lightly browned.
Lower heat & add all spices, stir & fry. Add
1 tbsp of water to stop the spices from sticking.
Spices must not burn!
As soon as this dries up add a little more water.
Keep doing so for 5 minutes.
Add 1 tbsp of tomato paste in with the other
ingredients, then add mushrooms & mix.
Sprinkle 2 tbsps of water & cover, cooking for a
further 10 minutes. Take the lid off during cooking, if
necessary, until the sauce has thickened.
The finished dish should have a little amount of
dark “gravy”, but it should not appear
runny.
