Rogan Josh (Lamb or
Beef)
With its origins in Kashmir, the
Northern-most state of India, a rich tomato & cream
sauce combined with a
“curries4u” spice pack
– a certain winner!
Ingredients
- 2.2lbs of lamb or beef cut into bite-sized
pieces
- 2 tbsps melted butter
- 1 large onion cut into rings
- 1 tin chopped tomatoes
- 2 tbsps tomato paste
- 3 fl.oz fresh cream
- Handful of coriander leaves, finely chopped, for
décor
- “Curries4u” Rogan

Method
Heat 2 tbsps melted butter and add
all the spices, stirring for about 3-4 minutes. Do not
burn!
Add the onion and cook for about 5-6
minutes. Add the meat and cook until meat is
“sealed”. Now add one tin of chopped
tomatoes and 1-2 tbsps of tomato paste. Stir and cook
for 2-3 minutes. Then add 4fl oz of warm water, bring
to the boil, cover and simmer for 60 minutes until the
meat is tender, stirring frequently to stop it from
sticking. If needed, further water can be added.
Take off the heat and add 3fl. oz of
double cream. The end result should look creamy, not
runny, so if still runny cook for a while longer to
reduce.
Sprinkle with coriander leaves and
serve.
